Google’s Help on Google updates explains: Google gathers info from different sources, including user reports and licensed content. If those sources say your profile info is incorrect or outdated, Google may update the profile. You can review and manage these updates on your Business Profile — but Help is explicit: you can’t manage all Google updates through your Business Profile. Updates can show on Maps, Search, and other Google services. In the profile editor, blue text marks info changed by Google; black or white means no Google update on that field. If Google updates exist, you’ll usually see a notification at the top of the page.

Capture the top notification, blue fields, email/SMS text, and the date/time. You may need this if the profile is also suspended.
Separate Google updates from your own pending edits
Blue = Google-changed (Help). Your pending save = owner edit under review (Accepted / Not approved / Pending).
Review Google updates in Edit profile
Open the Business Profile → follow the notification into Edit profile → review fields Google changed. Keep accurate changes; reject or correct inaccurate ones where the product allows. Help: you can’t manage all Google updates in-product — if a field won’t revert, document it and escalate carefully.
Respond to “Does this look right?” prompts when you get them
If Google asks whether a user suggestion is correct, answer accurately within the stated window when one is given. Silence can let a bad edit stick.
Re-align categories, address visibility, and service areas if those fields were touched
