Google’s Help on managing your business category says categories inform customers about what your business does and affect local ranking. Choose a primary that best describes the business, and prefer a specific option from the list (e.g. “Nail salon” instead of “Salon”). If the exact category isn’t available, pick a more general one that still fits — you can’t create your own. Additional categories are for real departments or services; Help says do not select a category for every product or service — use a few from the provided list. Independently owned, public-facing departments should have their own Business Profiles. Important: adding or editing a category may ask you to verify again.
Representing guidelines add: use as few categories as possible; pick ones that complete “This business IS a” rather than “HAS a”; do not use categories solely as keywords or attributes; do not use categories that belong to nearby or related businesses.

Step-by-step: what to do next
Write one honest sentence
“This business IS a ___.” That blank is your primary-category candidate. Not “HAS lawn care, stump grinding, snow, and pressure washing.”

Capture primary + every additional category and any pending-edit or re-verify banners.
Follow Help’s edit flow
Business Profile → Edit profile → next to Business category, Edit → set Primary category from the list → add only a few truthful additional categories → Save. (Wording can vary slightly by surface; match the Help intent.)
Expect possible re-verification
Help: if you add or edit a category, you might be asked to verify again. Pause other risky edits until verification is stable.
Align name, address visibility, and service areas
Categories won’t save a stuffed name or a home address shown on a true SAB.
